The story of VAJ began during the global pandemic. The founders responded to a growing demand that had been steadily shaping Budapest’s food scene in recent years. More and more people were looking for high-quality, artisanal pastries and proper sourdough bread, while the available selection struggled to keep up with the rising interest.

The first location opened near Rákóczi Square, where the brand’s largest production bakery still operates today. The name choice is simple yet meaningful. It became VAJ because butter is one of the key ingredients in almost everything they make. At the same time, it’s a short and memorable name that even international guests can easily remember.
Almost everything is made in-house
One of the most distinctive features of VAJ is that a large portion of its products are made internally. This includes not only pastries and breads, but also creams, jams, soft drinks, and even their own house-recipe kombucha.
Their commitment to quality is reflected in the careful sourcing of ingredients, including butter and flour selected from trusted French suppliers. At the same time, wherever possible, they work with Hungarian producers, especially for seasonal items, and have also sourced local ingredients for their rye bread. The goal remains consistent throughout, using the best possible ingredients while maintaining a steady, high level of quality.

The pistachio croissant, a signature must-have at VAJ Sas
Standing in front of the counter, it’s easy to get lost in the selection. From the classic cocoa swirl to generously filled croissants and seasonal desserts, there is something intriguing in almost every category. When it comes to croissants and laminated pastries, VAJ places particular emphasis on layering and butter content, which during baking creates that signature crisp exterior and soft, airy interior. The pistachio croissant has by now become almost iconic, and it remains one of the most popular choices.




Beyond the classics, the selection also explores more exciting directions. One example is the crème brûlée croissant, finished with a thick, caramelised top layer, where the contrast between the vanilla cream and the brittle caramel surface defines the experience.
One of the most exciting pastries for us is the Bostock croissant. Filled with almond cream and house-made forest berry jam, it is baked twice, while toasted almond slices surrounding the pastry further enhance the flavour profile.




Among the returning seasonal favourites is the strawberry and vanilla danish, made with house vanilla cream, strawberry jam, and fresh strawberries. The combination of golden, flaky pastry and fruit-forward filling fits perfectly into the summer season.


Also making a return are the bullars, which have come back to the selection after a short break. The soft chocolate and cinnamon versions echo the world of classic bakery goods while still carrying VAJ’s signature level of quality.
Not only pastries on the menu
While most people arrive for the croissants and sourdough breads, VAJ offers much more beyond that. The counter features generously filled sandwiches, along with a selection of grilled sandwiches made fresh from sourdough sandwich bread. The ham and cheese toast comes with smoked boiled Prague ham, cheddar, and sun-dried tomatoes. The grilled chicken version is paired with gouda and oregano, while the Diavola toast brings bolder flavours with tomato sauce, spicy Spianata Romana salami, and basil. In every case, the quality sourdough bread and the satisfying melt of cheese are guaranteed.




The vegetarian option is made with grilled peppers, cheddar, and sun-dried tomatoes, ensuring there is an exciting choice for those following a meat-free diet as well.
Specialty coffee, matcha, and house-made drinks worth a visit to VAJ Sas on their own
Although most visitors first come for the pastries and sourdough breads, the drink selection deserves just as much attention. The specialty coffee program is handled by Casino Mocca, one of the most established names in Hungary’s specialty coffee scene. Their light roasts highlight the character of each origin, making the unique aromatic profiles clearly perceptible. VAJ also regularly hosts guest roasters from abroad, meaning returning guests can discover new coffees from time to time.

Matcha lovers are equally well served. Premium matcha from Zhao Zhou has long been a defining part of the selection, making a creamy matcha latte just as natural a choice here as a flat white or cappuccino. The rising popularity of matcha culture fits seamlessly into VAJ’s philosophy, where ingredient quality is always the top priority.
